OPAH- WILD HAWAII than Also known as the 'moonfish', opah flesh is buttery tender and the flavor is something like Ono and Mahi Mahi blended together. It has a natural sweet flavor and firm texture. Opah has meat that is bright red and orange and has the highest content of fat-more than salmon. They yield a beautiful orange/red fillet that is a little oilier most fish.

TUNA- AHI - WILD Hawaii In Hawaiian Ahi means 'fire'. There are three species of Ahi:
Yellow Fin- the most common Tuna
Big Eye- the Hawaiian Blue Fin,deep red color and high oil content.
Tombo - Hawaiian Albacore

WALU - 'White tuna' or escolar, walu has a rich buttery flavor, rich oil content and tuna like texture. Walu is a very dense fish with high mositure retention.

ONAGA - Also known as a Long Tail Red Snapper, the Onaga wins the most beautiful Snapper award. Their fillets are light pink to almost white. When eaten raw, texture is creamy with a crunch. To many it is difficult to distinguish the flavor difference between Onaga and Opakapaka.

OPAKAPAKA - Also known as the Pink Snapper, this is probably the perfect Snapper. Opakapaka meat is extremely buttery and moist, delicate fillets that melt in your mouth when sautéed, baked, steamed or broiled. Their size ranges from 4 to 14 pounds. They're caught by the hook and line method and are considered to be the most difficult fish to catch.

MONGCHONG - Only found in Hawaii, this meat is extremely rich and creamy, snow white meat firm enough to grill. High oil content preserves the buttery flavor. A deep water fish that is rapidly gaining popularity in Hawaii and declared by most professional chefs as a fish with special appeal.

ONO- Also known as Wahoo or the King Mackerel. In Hawaiian, Ono means "sweet, very good". Delicious can also describe this well-known Pacific fish. The fillets of the Ono are white and firm.
